Bourbon Glazed Meatloaf

Oh my how can you go wrong with bourbon and bacon???  You can't!!!
I have found that I like the taste of bourbon with beef.  I loved my bourbon marinade that I used with our steaks a few weeks ago and this meatloaf is no exception it was awesome as well.

I started with a basic meatloaf and wrapped it in bacon.  The star of the recipe came next.  I slathered the meatloaf with a Bourbon Glaze.  The glaze is very simple and easy to mix together.  I reserved some of the glaze and warmed it up to serve as a dipping sauce for the meatloaf.

 

I was not a bourbon fan until we started visiting some distilleries on the Bourbon Trail with Billy and Amanda.  So far my favorite is Marker's Mark.


Bourbon Glazed Meatloaf

Meatloaf:
1 pound ground beef
3 slices of bread
1/4 cup milk
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
4 slices bacon

Bourbon Glaze
1 cup ketchup
1/2 cup brown sugar
1 shot bourbon
1 teaspoon Worcestershire sauce
1/2 teaspoon liquid smoke

Preheat oven to 400 degrees

Put bread slices in a large bowl and cover with the milk.  Let sit until bread is soggy.  If you need to you can add a little more milk.  

Add the ground beef and work the bread and ground beef together with your hands.  Sprinkle in the salt, pepper, garlic powder and onion powder.  

In a separate small bowl, beat the egg.  Pour the beaten egg into the meat mixture.  With your hands mix everything together.  

Form into a loaf and wrap bacon slices around and tuck under the bottom of the meatloaf.

Bourbon Glaze

Mix all ingredients together.  Slather the meatloaf with about 1/3 of the sauce.  Place meatloaf in the oven and bake until the internal temperature is 160 degrees.  Mine was in the oven for 1 hour and 20 minutes.  

Heat up the reserved Bourbon Glaze and use as a dipping sauce for your meatloaf...enjoy!
