Wild Rice Soup with Mushrooms and Chicken

I love when I find a product that is super fast to fix and taste great.. all I have to do is add a few special items and it becomes gourmet.  You would never know this soup started as a soup mix ;)
This is one of my favorite soups from Bear Creek Country Kitchens.  You can find the soup mix in your groceries soup isle.


All there is to do is follow the directions on the package and then with about 5 minutes remaining to cook I added 2 cans of chicken and my sauteed mushrooms.  You could always add your mushrooms in earlier and let them cook down into the soup but I like the taste of the buttery sauteed mushroom and that they are soft when I add them to the soup mix... you know me I am not a fan of crunchy :)



Wild Rice Soup with Mushrooms and Chicken

8 cups boiling water
1 package Bear Creek Creamy Wild Rice
2  cans Swanson Premium White Chicken- 12.5 ounce
8 ounces sliced mushrooms, sauteed in butter

Put 8 cups of water into a large soup pan and bring to a boil, Add the soup and stir well.

Turn the heat down to medium and simmer uncovered for 5 minutes.

Meanwhile saute the mushrooms in a little butter until tender.

After the soup has simmered for 5 minutes, add the 2 cans of chicken and the mushrooms, give a gentle stir and continue simmering for 5 minutes or until the rice is tender.  Enjoy your super fast meal with a grilled cheese....YUM!
