Spinach Artichoke Dip

Here was another appetizer that Bill and I made for Logan and Erin's wedding

I am not a fan of cooked spinach and I also heard from others at the wedding that are not but this dip was really good!  I think the cheese mellows out the spinach taste.  We served the dip with pita chips.

Spinach Artichoke Dip

I made a big batch for Erin's wedding. I made it in a roaster, set roaster at 250 degrees for 2 hours stirring occasionally.

ingredients:


  • 10 ounce bag of fresh spinach
  • 14 ounce can artichoke hearts, chopped
  • 8 ounces cream cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/3 cup grated Parmesan Cheese 
  • 1/4 teaspoon salt
  • 1 teaspoons minced garlic

instructions


  1. Preheat oven to 400 degrees

    Blanch Spinach in boiling water for 30 seconds, remove from water and rinse with with cold water.  Squeeze out as much water as possible and give spinach a rough chop.
  2. Mix all ingredients together and put in a baking dish.  Bake at 400 degrees for 20 to 25 minutes.
