French Toast Casserole

I don't know about you but I LOVE Brunch Food!!
My favorite part about Brunch Food is the casseroles... There is something relaxing and so laid-back  about comfort food... eggs, sausage, ham and hash brown casserole... Yum.


Oh but then there is coffee cakes, donuts, bacon and don't forget the mimosas :)  Lately when we have had baby showers or bridal showers we have been having them as Brunch showers... and with that I have an announcement to make.......

I am going to be a Grammie in February 2020 so I better brush up on my Brunch game for the upcoming baby shower that Cally will be throwing for Billy and Amanda 


My favorite part about this French Toast casserole is the yummy streusel topping... all that brown sugar, cinnamon and nutmeg is irresistible.  It's like having 2 of my favorites in 1 dish... french toast and coffee cake :) It is also like having dessert for breakfast... this casserole reminds me of bread pudding!


I like to cut my bread in cubes and let it sit out to air dry (or get stale) the night before or you can just use stale bread or do like I did yesterday and pop your bread cubes in the oven for 10 minutes @ 300 degrees tossing cubes half way through.  The drier bread cubes help with the egg custard not making the cubes so mushy.


French Toast Casserole

1 loaf french bread   (or your favorite bread-- I also like to use a loaf of Amish Cinnamon Bread)

egg custard:
8 eggs
1 cup milk
1 cup whipping cream
1/2 cup sugar
1/2 cup brown sugar
1 Tablespoon vanilla

topping:
1/2 cup flour
1/4 cup brown sugar
1/4 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/4 cup oil

In a large bowl mix together the egg custard.  Add in the bread cubes and mix until all bread cubes are covered.  Pour into a 9x13 greased baking dish, set aside

In another bowl mix together the topping until crumbly.  Sprinkle the crumbly topping over top of the casserole.  Bake at 350 degrees for 55-60 minutes or until center is done 

Serve with syrup
