Valentine Cupcakes with Two-Toned Coconut Buttercream

Coconut Buttercream.... oh Yum!!!
This recipe was inspired from Cally and I's trip to Waco this past summer.  While in Waco we visited the Silos Baking Company, which is owned by Chip and Joanna Gaines.

The cupcakes were out of this world delicious.  My favorite was the Shiplap.  To me the icing tasted of toasted coconut even though the description was Vanilla Cake + Vanilla Buttercream.






        Again this year I’m so excited to participate in this Valentine’s event 

                         



This is the fifth year for our event and we want to continue to make a difference in the fight against pediatric cancer. Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved. And with the ongoing pandemic, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research! I used my go to cupcake recipe for the cupcakes but created a Coconut Buttercream to put these cupcakes over the top delicious.  I used cute Valentine sprinkles of pink, green and white for the upcoming Valentines Day Celebration.

I think these cupcakes would also be good sprinkled with toasted coconut not to mention I love the smell of toasted coconut :) 
           


I tried a new technique for my icing.  I did a Two-toned pink and white icing for these cupcakes and iced them using Wilton piping tip 1M.  After making the icing, I removed half to another bowl and colored it pink.  

To create the Two-toned color, I took a piece of plastic wrap and spooned the white icing in a log down the center of my plastic wrap.  I then repeated with the pink icing, spooning a log parallel along side the white icing.

Fold the plastic wrap over forming it into a two-toned log.  Twist the ends by twirling the icing log to seal the ends.  

Take a piping bag that has your selected tip on the end (I used 1M) now drop your wrapped icing log into the piping back and pull the plastic wrap end through your tip and trim it off close to the end of the tip.  Now when you squeeze the bag you will get a two-toned beautiful icing!

Vanilla Cupcakes with Coconut Buttercream Icing

cupcakes:
1 Duncan Hines White Cake mix
1 cup flour
1 cup sugar
1 small box instant vanilla pudding
3/4 teaspoon salt
1 1/4 cups water
2 tablespoons oil
1 teaspoon vanilla
1 teaspoon almond
1 cup whipping cream with 1 tablespoon Lemon Juice added to sour the whipping cream
4 egg whites

Preheat oven to 325 degrees.  Place cupcake liners in cupcake pan (You'll need about 40)

Put 1 cup of whipping cream in a measuring cup and add 1 tablespoon Lemon Juice, allow to sit for a few minutes so that the whipping cream will curdle and become thick.

In a large bowl mix all ingredients together.  Continue mixing for about 2 minutes

Pour batter into cupcake pan.  Bake for 13-15 minutes or until toothpick inserted in cupcakes comes out clean.

Cool completely then ice with Coconut Buttercream frosting

Coconut Buttercream:
1 stick Crisco
1 stick butter, softened
1 packet Dream Whip
8 drops Wilton Treatology Toasted Coconut flavoring
1 cup whipping cream
2 pounds powdered sugar

Cream Crisco and butter.  Add in cotton candy flavoring and dream whip and mix.  Add alternately powdered sugar and whipping cream and mix until light and fluffy.

Ice cupcakes however you wish, I used Wilton 1M decorating tip.

Decorate cupcakes with sprinkles or toasted coconut
