Cranberry Pecan White Chip Cookies

Growing up dried cranberries is one of those foods that I would have never tried.  As an adult though, I find dried fruits such as cranberries and pineapple are pretty good.

As you all probably already knew... I am a very picky eater and do not like many fruits or veggies.  I eat a pretty boring hamburger lol.

Bill is on call this weekend and we were awoken this morning for his first call.  I was feeling bad for him and decided to make him cookies.  He was home for a bit and was able to enjoy some cookies before his second call came in this afternoon (and he also took a bag of cookies with him)  Hopefully this makes his day a little better.

This is the weekend we have turned our clocks up and wow... I just noticed it is after 5:00 and it sure does not seem like it... I so hate when we have to turn the clocks up!


I used the above Cranberry and Pecan Topping in the cookies.  This topping mix is AMAZING!  I also use this in our chicken salad.  It would be good on salads and mixed in yogurt as well.  I purchased mine at Sam's Club but I am sure you could find it elsewhere.  If not just add dried cranberries and chopped pecans to your cookies.

Want to make your cookies extra decadent?  Drizzle over some melted white chocolate... I am going to give this a try next time I make these cookies.  Oh yes, a white chocolate drizzled cranberry Pecan white chip cookie with a cup of your favorite coffee.... this sounds awesome!


 Cranberry Pecan White Chip Cookie

1 cup salted butter
1 cup white granulated sugar
1 cup brown sugar
2 eggs
1 Tablespoon Vanilla
1 Tablespoon Molasses
1 1/3 cups all purpose flour
1 1/3 cups bread flour
2 Tablespoons Malted Milk Powder
1 teaspoon baking soda
1 teaspoon salt
2 cups white chocolate chips
2 cups Fresh Gourmet Cranberry & Pecan topping

Preheat oven to 350 degrees

Cream together the butter and sugars until smooth.
 
Scrape down the sides of the bowl and add the eggs and beat until incorporated.  

Add in the Vanilla and Molasses and mix until incorporated.

To the mixture add the flours, malted milk powder, salt and baking soda and mix until combined

Mix in the white chocolate chips and Cranberry & Pecan topping

Scoop cookie dough onto parchment covered baking sheets.  Bake for 11-12 minutes.  My cookies were really soft out of the oven so I cooled them on the baking sheets for 5-10 minutes before moving them to the cooling racks.
