Sweet Potato Casserole

As a kid you would not have caught me eating a sweet potato but as an adult…. I love sweet potatoes fixed many ways!
I am not sure if my taste buds have changed or if I just had it in my mind that sweet potatoes were no good?  Although maybe it is all the yummy goodness I now add to sweet potatoes.  Of course all sweet potatoes to me need to be coated with cinnamon sugar scrumptiousness ❤ or Marshmallows!


I am still working on my bag of sweet potatoes I bought in Georgia in October.  Oh boy no argument from me as these are the best sweet potatoes I have ever had!  As far as taste and the easiness of peeling, boiling and mashing.  For both my sweet potatoes and white potatoes, I like to use my Potato Ricer to make sure I have no lumps in my mashed potatoes.  I used 2 pounds of potatoes for this casserole and I would say this is 5-6 servings.  If wanting a 9x13 pan of sweet potato casserole I would use 4 to 5 pounds of potatoes and double this recipe.


After pushing the potatoes through the ricer you could just mash them by hand if you choose.  I still prefer to use my hand mixer though.


Before mashing my potatoes with the mixer, I add all my yummy goodness to the pan.  Butter, Sugar, Cinnamon, Nutmeg, Vanilla and don’t forget the Whipping Cream!!!


I do love sweet potatoes with a brown sugar - pecan crunchy topping however last Christmas Cally was helping in the kitchen and mentioned that her friend Laura makes the best Sweet Potato Casserole with marshmallows on top.  So this tradition started, we made our normal mashed sweet potatoes and sprinkled them with marshmallows then into the oven for the marshmallows to warm and swell up.  It reminds me of marshmallows roasting over a fall bonfire.


Sweet Potato Casserole

2 pounds sweet potatoes, peeled and boiled
1/2 cup sugar
4 Tablespoons butter
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup whipping cream (can use milk or half and half)
Miniature Marshmallows 

Heat oven to 350 degrees. Grease or spray a small casserole dish or pie plate.  

Peel and cut potatoes in chunks, place in a pan and cover with water.  Boil potatoes until tender.  

Drain potatoes and place back in the pan.  To the pan add sugar, butter, vanilla, cinnamon, nutmeg and whipping cream.  

Whip potatoes with mixer until they are combined and fluffy.

Pour whipped potatoes into prepared baking dish and scatter miniature marshmallows on top.  Place potato casserole in the oven until marshmallows are a little browned and fluffed up.
