Strawberry Cake with Strawberry Cheesecake Chocolate Icing

Strawberry Cake with Strawberry Cheesecake Chocolate Icing 
The cake was a super strawberry flavor!  I used a Duncan Hines Strawberry Cake mix and then also added a half cup of puréed fresh strawberries.  The addition purée also made the cake a really pretty pinky/red color.


You can also see the strawberry purée in the cake slice, it’s the flecks of dark red color


For the icing I used a package of Wilton Tasty Strawberry Cheesecake chocolate melts.  To grind them up I used my Ninja blender, pulsing them until they were small pieces.  The icing is my Buttercream Icing with the Strawberry Cheesecake melts mixed in.  It made the icing quite bumpy but it did taste like strawberry cheesecake.


When I think of strawberries, I think of spring and early summer.  This would make an excellent Easter dinner dessert.  




Strawberry Cake

Duncan Hines Perfectly Moist Strawberry Supreme cake mix
3.4 ounce box Vanilla instant pudding mix
3/4 cup buttermilk
2/3 cup sour cream
3 eggs
1/2 cup puréed fresh strawberries
1 tablespoon vanilla
1/3 cup oil

Preheat oven to Convect at 325 degrees or for non convection 350 degrees.

Grease and flour 3 - 6inch round pans. (Or you can use 2- 9inch pans, 1- 9x13 inch pan, 2- 10 inch pans— you’ll just have to adjust your baking time for these different pans)

In a bowl whisk together (wet ingredients) buttermilk, sour cream, eggs, strawberry purée, oil and vanilla until combines, set aside.

In a mixing bowl combine the cake mix and pudding mix (dry ingredients).  Pour the wet ingredients into the dry ingredients and whisk together until well combined.

Pour cake mixture evenly between the 3 prepared pans.  Bake for 25 to 30 minutes,

Strawberry Cheesecake Chocolate Buttercream Icing

3 stickers softened butter
1 1/2 tablespoons  vanilla
1 envelope of dream whip
6 cups powdered sugar
12 tablespoons whipping cream, divided
1 7 ounce package Tasty by Wilton Strawberry Cheesecake Candy Melts

Place candy melts into a food processor or blender and pulse until candy is in small pieces, set aside

Combine in a mixing bowl the butter and dream whip.  Combine until fluffy.  Add in vanilla and 6 tablespoons whipping cream and whip with mixer until combined.

Turn mixer to low speed and gradually add powdered sugar a cup at a time also adding 1 tablespoon of whipping cream in between each cup of powdered sugar until all powdered sugar and whipping cream have been added.  

Add in the Strawberry Cheesecake chocolate and mix until combined, then turn the mixer to high speed and mix for 2 minutes until icing is light and fluffy.

Assemble cake:

For my layered cake.  I did set some icing aside before I added the strawberry cheesecake candy melts so that I could put the rosettes on top with Wilton tip 1M (the icing would not flow through the cake tip with the chocolate chunks).  You can decorate your cake in any manner you wish and just simply icing it with the strawberry cheesecake chocolate buttercream would also turn out fabulous!
