Lasagna Soup

Lasagna Soup
If you are a lasagna fan then you will love Lasagna Soup!  When it’s cold out, soup is a go to meal for us.
Soup and bread is a favorite.  The picture above was my supper tonight.  I had left overs :).  In the picture you can see that my soup tonight was not very soupy.  The pasta had actually soaked up the juice overnight.  Tonight I should call this Lasagna in a bowl… hahaha… again it was really good.  Put a dollop of the cheese mixture on top and mix into the hot pasta and you have a cheesy Lasagna meal in a bowl.


Here is a picture of the soup just before we ate it the first night.  You can see in this picture it was very soupy.  The cheese mixture we added to our bowl is ricotta cheese, mozzarella cheese and fresh grated parmesan cheese.  The soup is hot and the cheese mixture melts right down into the soup, give it a little stir and it is perfect.


For my soup I used 2 of our Aldi favorites.  Tomato basil soup and Premium Marinara.  The Tomato Basil soup is really good served with grilled cheese!


The soup has both lasagna noodles and penne pasta because I did not have enough lasagna noodles.  You can really use whatever pasta you have on hand in your soup.



Lasagna Soup

1 pound ground beef, browned
1 25 ounce jar marinara sauce 
1 18.6 ounce can Tomato Basil Soup
4 cups beef broth
1 teaspoon onion powder
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon Italian seasoning
1/2 teaspoon rosemary
1/4 teaspoon salt
1/4 teaspoon pepper
5 lasagna noodles, broken into pieces
1 cup penne pasta

Cheese Mixture
1 cup ricotta cheese
1/4 cup shredded Parmesan cheese
1 cup mozzarella cheese

Brown ground beef, drain and put into Dutch oven or large pan.  Add marinara sauce, tomato basil soup, beef broth, onion powder, basil, oregano, Italian seasoning, rosemary, salt and pepper.  Simmer for 30 minutes.  Bring to a boil and add the pasta.  Continue to lightly boil until the noodles are tender.  

while noodles are cooking in the soup, mix together the cheese mixture.

Once soup is ready, spoon soup into bowls and put a dollop of cheese mixture on top of soup.  Cheese mixture will melt, stir into soup.
