Devils Food Skillet Sheet Cake with Cotton Candy Buttercream

Devils Food Skillet Sheet Cake with Cotton Candy Buttercream


I found a new cast iron 12x14 inch sheet pan.  So of course I made a cake 😍.  This pan size will be nice for birthday cakes. The skillet is made by Bayou Classic 12 inch x 14 inch Cast Iron Pan that I bought from Bed Bath and Beyond.  Just like my other cast iron skillets, this cake came out of the pan with ease leaving the pan spotless.


I iced the cake in my usual rosette swirls using Wilton piping tip 1M.  This is the same recipe as my other devils food skillet cake just more batter to fill the larger pan and more icing.


Devils Food Cake

2 c flour
1 t salt
1 t baking powder
2 t baking soda
3/4 C cocoa powder
2 C sugar
1 C hot coffee
1 C oil
1 C buttermilk
2 eggs
2 t vanilla

Preheat oven to convection 325 degrees (If not using convection setting preheat to 350 degrees).  In large bowl add all dry ingredients.  Add coffee, oil and buttermilk to dry ingredients and mix until combined.  Add egg and vanilla and mix for 2 minutes.  Pour batter into greased and cocoa powder dusted 12x14 inch cast iron pan. Bake for 30 minutes or until toothpick inserted in the middle comes out clean.  Cool cake before icing.


Cotton Candy Buttercream Icing

If you are smooth icing the cake then 1 batch of icing will be all you need.  If using the 1M piping tip as I did, I made 2 batches of icing.  First smooth icing the cake then piping the rosettes on after that.

1 C crisco
1 C salted butter, softened
2 t cotton candy flavoring
2-4 Tablespoons whipping cream 
4 cups powdered sugar

Whip together the crisco and butter until well combined.  Add cotton candy flavoring and mix well.  Gradually add powdered sugar and whipping cream, adding 2 Tablespoons and if the icing is to thick add the additional 2 Tablespoons of whipping cream.  Whip until light and fluffy.

For the cake I iced the whole cake and then piped the rosettes on the top with a Wilton 1M
