Peanut Butter Fudge Truffles

Today was Valentine's Candy making day for my sweeties.  Billy and Cally were both home this weekend so I wanted to make sure I got their candy done so they could take it home with them today.


When I was growing up my Mom made chocolate candy treats for all the holidays.  Melting chocolate and using candy molds is so easy to do.  There are many different chocolate molds and you can make many different creations.  I chose to make Peanut Butter Fudge filled Truffles.


The truffles were very easy to make.  You will need a candy mold, candy paint brush and a ketchup/mustard bottle.  The first step to do is melt the chocolate.  I melted my chocolate in the microwave in 1 minute increments stirring after each time until melted.  Next pour the melted chocolate into the ketchup/mustard bottle.  Fill each candy mold cavity about 1/3 full.  With the candy paint brush, brush the melted chocolate up the sides and all over the inside of the mold.  After each mold cavity is coated place the candy mold in the freezer until the chocolate is set.  Now take a small amount of the Peanut Butter Fudge and place inside each cavity.  Lastly take the melted chocolate and finishing filling the mold over the peanut butter fudge.  Place in the freezer until completely set.


For the Peanut Butter Fudge, I made a microwave peanut butter fudge but I added whipping cream in place of milk and increased the amount a little.  This way it kept the fudge from setting up and it stayed a little gooey.  Oh it is so good to eat right out of the pan and I am thinking it would be a good dessert dip on a chocolate cookie or a chocolate graham cracker.  I am going to have to work on that one!

Peanut Butter Fudge Truffles

4 C powdered sugar
1 stick butter
1 T vanilla
1/3 C whipping Cream

Place powdered sugar in microwave safe bowl and make a well in the center.  Next add butter,vanilla and whipping cream to the center well.  Microwave for 1 minute.  Take out of microwave and mix with a mixer.  Pour into a pan that has been coated with cooking spray.  Place fudge in freezer for about 10 minutes to cool.  Now it is ready to place inside of your truffles.
