Happy Fall!!  This is the best time of the year.  Fall is my all time favorite season.  I love all recipes with apples and pumpkin.  Fall to me is a time for comfort food.... like chili and soups. When I think of fall I can image smelling cinnamon, nutmeg, allspice, ginger and cloves.

We had an eventful ending to last week to say the least.  Cally was on her way home from school on Thursday and while at a stand still on the highway she was rear ended.  Needless to say poor Cally was a little bit freaked out by it all.  It being her first car accident and that she was by herself and 2 hours from home.  I was not faring any better as I felt helpless being so far away and her being so upset.  It all ended up ok.  Cally does have a concussion and whip lash but she has gotten meds and is on the mend.  I have had a good weekend with having both the kids home.  It is so nice to sit down in the evening in front of the fire with all 4 of us watching TV and playing on our computers.

I entered my Strawberry Champagne Cake over on the Gooseberry Patch in the bog hop last week and it received the most votes and is now featured on their blog page.  My Steak Burrito Bowl is also featured further down on the blog post.  There sure are a lot of good dishes featured over there,  click here to go to Gooseberry's Patch blog.



This Amish Apple Brownie is a family favorite of ours.  Cally made this several years ago for a competition at the county fair and she won 4th place.


They remind me of a blond brownie but with a cinnamon spice taste and nutty.  They are super moist and really good.  It is one of those things that you start eating and want to eat the whole pan.  The recipe called for it to be baked in a 9 x 9 pan but I baked mine in a 9 inch round pan.  I also increased my baking time by 10 minutes because it was not all the way done in the middle.

Amish Apple Brownies

1 cup butter, softened
2 eggs, well beaten
2 cups flour
1 teaspoon baking powder
1/2 teaspoons salt
2 cups chopped apples
1 3/4 cup sugar
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cups pecans
Vanilla Glaze
1 cup powder sugar
1 tablespoon hot water
1/4 teaspoon vanilla

In a large mixing bowl cream butter, sugar, eggs and vanilla with mixer.  Combine dry ingredients and add to butter mixture.  Mix until flour is moistened.  Fold in apples and nuts.  Spread in greased 9x9 baking pan and bake at 350 degrees for 45 minutes.

Drizzle warm brownies with vanilla glaze.

Apple Crisp and Portsmouth Road Trip

Bill and I went to see Cally today in Portsmouth.  We had a great day!  We arrived in Portsmouth just before noon and picked Cally up and went for a ride.  We traveled on the Ohio Byway.  It was called the Scenic Scioto Heritage Trail.  On this byway we went to see Ohio's Biggest yellow Buckeye Tree.  We had to hunt but we did find a few buckeyes.  This tree was huge!


We also went to the Shawnee State Park.  The lodge was beautiful!  The below picture  is the scene off the back of the lodge porch.


Even though we have seen the murals on the flood wall we went again to take a look.  These paintings on the flood wall are the most beautiful paintings I have ever seen painted on an outside wall or building.





I love this picture of the cat.  This is the flood gate building and on the building it has bricks painted and this cat is painted at the edge of the door on the side of the step with it's food bowl being painted on the door.

Well now to the Apple Crisp.  I love this time of year ..... Autumn is my favorite season.  Apples and pumpkin are my favorite autumn flavors.



ALANNAH'S APPLE CRISP

10 medium apples
1/2 cup white sugar
1 tbsp. cinnamon


Topping:


1 cup quick rolled oats
1 cup brown sugar (packed)
1/2 cup white flour
1/2 cup melted butter



Preheat oven to 350°F degrees.Peel, quarter, and slice apples. Place apples evenly into 9 x 13 inch glass baking dish. Sprinkle white sugar over apples and sprinkle cinnamon over the sugar.
Mix oats, brown sugar and flour until blended well. Stir in melted butter until fully moistened.
Cover apples evenly with topping.
Place in preheated oven and bake 35-45 minutes until golden brown and bubbly.
Serve hot or cold, alone or with ice cream and ENJOY!!

Galette { panless pie: any flavor }

I love this pie crust.  It's nice to just fold up the sides and not have to worry about making it pretty in a pie pan.  Although I am going to try and attempt it again.  Pie crust has always intimidated me.  I like this Galette because I have pie crust folded up on the sides into the middle then in the very center I also have my french topping.  When cut you could even pick the pie up in your hands and eat it, no need for a plate or fork.


Pick a fruit Galette

Pastry Crust:

2 C flour
11 T butter
1/4 t salt
4-5 T ice water

Put the flour and salt in a bowl, cut the butter up and place in the bowl. Cut the butter into the flour with a pastry cutter until the butter is in small crumbly pieces.  Add the water a tablespoon at a time until the dough comes together into a ball.  Wrap it in plastic wrap and put in the fridge until ready to use.

Apple Pie Filing

5 apples
3/4 C sugar
1/4 C flour
1/2 t nutmeg
1/2 t cinnamon

Peel and cut apples into thin slices.  Then mix together the dry ingredients and pour over apples.  Mix well.

French Topping

1/4 C brown sugar
1/2 C flour
1/4 C butter

Put brown sugar and flour in a bowl, cut in the butter with a pastry cutter.

To Assemble the Galette:

Roll out your pastry dough on a floured surface.  You want it to be at least 12" in diameter.  Don't worry about it being perfect--that is the beauty of a galette -- it's suppose to be messy looking.  To transfer the dough to your baking sheet, fold you circle in half and then in half again.  Place on baking sheet and unfold.

Dump your fruit mixture right in the middle, bring the sides of the crust up to the middle.  Sprinkle your french topping over the apples in the middle to cover the hole.  Bake at 375 degrees for 50-60 minutes.

Apple Pie

These are cute little pies.  They are made in 4 oz jelly jars.  These can be frozen and popped in the oven when you want some pie.  That is what I really liked about this recipe.  I thought these would be good to make up and freeze to send with Billy when he moves to his apartment in the fall.  Then he can have pie whenever he wants.  I got the idea for this from the blog Our Best Bites   I also used the pie crust recipe from this site as well. 





Apple Pie filling:

5 apples
3/4 C  sugar
1/4 C  flour
1/2 t  nutmeg
1/2 t cinnamon
pie crust:
2 C  flour

Pie Crust:

Put the flour and salt in a bowl, cut the butter up and place in the bowl.  Cut the butter into the flour with a pasty cutter until the butter is in small crumbly pieces.  Add the water a tablespoon at a time until the dough comes together into a ball.  Wrap it in plastic wrap and put it in the fridge until ready to use.

Peel and cut apples into little pieces.  Then mix together the dry ingredients and pour over apples.  Mix well.
Roll out dough and cut dough into a 6 inch circle for the crust.  For the top of your crust cut a circle using the canning jar lid.  Put the 6 inch circle into the jar and spread it out to make the crust.  Fill the jar with your apple pie filling and then place the smaller circle on top and seal around the edges to close the pie.  Put 4 small slits on top of the crust.  Finish rolling the dough and filling the jars, this will make 8 jars.
Place jars on a cookie sheet and bake in a 350 degree oven for 45 minutes.
