Well the calendar says it is summer :)  Our weather is so wacky here!  It is warm one day and like yesterday it was cold.  I actually turned on my little space heater while I was working and after work I wore a sweat shirt :(

Peanut Butter Custard

  I love any flavor of custard!  A custard is made with egg yolks and sweetend cream whereas pudding is made with sweetend cream and corn starch. I like both but my preference is a nice thick and creamy custard. When I make my ice cream base I also like to start with a custard.  A custard can either be boiled or baked.  For ice cream, I boil it and then cool the mixture in the freezer before putting the custard mixture in my ice cream maker.

Chocolate Peanut Pie

Chocolate Peanut Pie was the pie I made for the Church Pie Auction.  The pie filling was really creamy and super rich.  My awesome Hubby was the highest bidder for my pie.


Cally made a Chocolate Peanut Butter Mousse Pie.  Her recipe was adapted from Monica's recipe on Lick the Bowl Good.  Cally used a graham cracker crust, only made the peanut butter Mousse filling, topping the peanut butter mousse with the Chocolate glaze and a ring of whipping cream around the edge.  For the recipe click here Chocolate Peanut Butter Mousse Pie


Cally's pie brought highest bid in the pie auction at Church last night.  It looked awesome!

Chocolate Peanut Pie
adapted from Taste of Home

CRUST:
1-1/4 cup chocolate cookie crumbs (20 cookies)
1/4 cup sugar
1/4 cup butter, melted
FILLING:
1 package (8 ounces) cream cheese, softened
1 cup creamy peanut butter
1 cup sugar
1 tablespoon butter, softened
1 teaspoon vanilla extract
1 cup heavy whipping cream, whipped
TOPPING:
1 cup whipping cream
1/4 C powdered sugar

In a small bowl, combine cookie crumbs and sugar; stir in butter. Press onto the bottom and up the sides of a 9-in. pie plate. Bake at 375° for 10 minutes. Cool on a wire rack.

For filling, beat the cream cheese, peanut butter, sugar, butter and vanilla in a large bowl until smooth. Fold in whipped cream. Gently spoon into crust.

For the topping: Beat the whipping cream until soft peaks form then add the powdered sugar and beat until well set.  If desired you can pipe the whipping cream on top of the pie for the flowered look that I have or you can just spread it out over the top of the pie.

Store in refrigerator. Yield: 8-10 servings.

Peanut Butter and Reese Piece Cookies

I am a happy Momma.  I got to see both of my kids this weekend.  Cally was home for the weekend to help at the firehouse's Chicken Dinner and Billy came home to visit today.  So it was extra special that I had them both home on the same day!

Bill and I were on vacation last week and we went to Bowling Green Kentucky to the Corvette Assembly plant and also to visit the Corvette Museum.  We had a great time.  We were able to tour the assembly plant.  That was a really neat experience.  We were able to walk through the plant, with a guide, and actually see corvettes being made on the assembly line.  This was the last week for the tours as they are preparing to start the new generation of corvettes called C7.  There was a section of the plant that was all boarded up so that we could not see what was going on behind the wall....I bet it would have been interesting to be able to see.


I made these Peanut Butter and Reese Piece cookies a couple weeks ago.  I sent some home with Cally and then dropped some in the mail to Billy.  The kids really liked them.

Peanut Butter and Reese Piece Cookies


adapted from Real Mom Kitchen

3/4 cup butter, softened
1 cup sugar
1 cup brown sugar
1 cup peanut butter
2 large eggs
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
2 1/2 cups flour

1 C Reese Pieces

Mix the ingredients down to the vanilla.  Add soda, salt, and flour. Add in the Reese Pieces and stir.  Scoop Tablespoons of dough onto cookie sheets covered with parchment paper.  Flatten cookies with bottom of glass dipped in sugar.  Using a fork make criss-cross patterns on top of each cookie.  Sprinkle sugar on top of each cookie.  Bake in 350 degree oven for 10 minutes.  Cool on cookie sheet then move to a cooling rack.

Cookies for the Fire Fighters after a long Day fighting a fire

It has been a busy day around my neck of the woods.  Around 11 am today an Oil company caught fire.  Our fire departments are volunteer fire departments and this was a huge fire.  They called for help and help they received,  it has been reported by WHIO TV that more than 50 agencies responded to battle the blaze.


This is what I saw from my front porch

I started hearing sirens and had no idea what was going on, a lady I work with had sent me a message  and wanted to know if the fire was close to my house.  I asked her where the fire was and then went outside, I did not see it before because it was at the side of the house but oh man did i see it now.

I heard sirens up until around 6:00pm tonight.  Because we are a rural community there are not fire hydrants except in our small villages and the school.  The sirens I was hearing all day were the fire tankers running back and forth between the fire and the hydrants filling up to fight the fire.  School dismissed early upon advice of the Sheriff's department.

Still now after 10:00pm there are still fire departments up at the scene.  When Cally got off work she went to the firehouse to see if there was anything she could do.  She stayed and helped clean up the fire trucks as the returned from the fire.  She said they sure would have liked peanut butter cake, I did not have time to do a peanut butter cake and get the icing to set up in time so I made them peanut butter cookies and took them down to the fire house.

These are my favorite peanut butter cookies.  The original recipe is over the top peanut butter cookies, I have made them the loaded way before also, but they are really rich.  The over the top peanut butter cookies are the peanut butter cookie and then you add chocolate chips and part way though baking you put reese cups on them.

Peanut Butter Pudding

Oh goodness...this pudding is luscious.  If you like peanut butter you will LOVE this pudding.  It is thick and rich and oh so peanut buttery smooth.  My dogs were begging for this pudding the whole time it was cooking.


I used my vanilla bean paste in the pudding...look at all those vanilla bean seeds on the measuring spoon.




Peanut Butter Pudding

    1/3 cup sugar
      4 1/2 teaspoons cornstarch
        1/4 teaspoon salt
          1 1/2 cups milk
            1/2 cup whipping cream
              1/2 cup creamy peanut butter
                1 teaspoon vanilla paste (can use extract)

                    In a saucepan, combine sugar, cornstarch and salt. Gradually stir in milk and whipping cream; bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from the heat; stir in peanut butter and vanilla bean paste until smooth. Pour into serving dishes; refrigerate. Garnish with whipped cream if desired.

                    Fudge

                    This chocolate fudge is good but I think I needed to add more chocolate chips to it.  It just has a hint of chocolate taste and the color is very light.  In my pictures you probably can not tell the chocolate fudge apart from the peanut butter fudge very well.

                    The peanut butter fudge is the best I have ever had.  It is smooth and just melts in your mouth...mmmmm

                    I used the same recipe for both fudges but I changed to all white sugar and added a bag of chocolate chips and deleted the peanut butter for the chocolate fudge.

                    Chocolate Fudge

                    adapted from Sweet Treats and More peanut butter fudge recipe

                    5 C sugar
                    1/2 butter
                    1 can (12oz) evaporated milk
                    1 jar (7oz) marshmallow cream
                    1 bag chocolate chips
                    1 t vanilla

                    lightly grease a 9 x 13 pan.

                    In large sauce pan combine sugar, butter and evaporated milk over medium heat.  Stir consistently until boiling and let boil for 7 minutes

                    Remove from heat and stir in the marshmallow cream until blended and melted.  Stir in the chocolate chips and vanilla until smooth.

                    Spread into pan and let cool.   Store in airtight container in refrigerator.
