Christmas Kentucky Butter Cake

Gingerdoodles and my Families Favorite Christmas Cookies

I had been seeing Gingerdoodles floating around on facebook this season.  I love gingersnaps and the taste of molasses.  I took one of my favorite sugar/snickerdoodle cookies and added molasses and spices to make my new Gingerdoodles.  This will now be a traditional cookie at my house.

Lemon Cheesecake Danish

I had a wonderful weekend!  I had Billy and Cally both home visiting for the weekend.  Billy got a new Chevy Truck so he was home to install the running boards on his truck.  Billy started a trend with us all.  He got his new truck and gave the fever to Bill and Cally.  Bill and I bought our new car a few weeks ago and Cally bought herself a new car this past weekend while she was home.  Bad thing about that is she has only had it for 5 days and was rear ended tonight back in Portsmouth.....ugh!!  Good news is she and Laynee are both ok.

Mexican Lasagna

If you like burritos you will Love this Mexican Lasagna.  When Bill and I were eating this we were thinking of other ingredients that could have been added..... jalapeno peppers, Mexican rice, salsa or if you like tomatoes.  We garnished ours with sour cream and Bill would have liked to add shredded lettuce to the top of his too.

Peanut Butter Custard

  I love any flavor of custard!  A custard is made with egg yolks and sweetend cream whereas pudding is made with sweetend cream and corn starch. I like both but my preference is a nice thick and creamy custard. When I make my ice cream base I also like to start with a custard.  A custard can either be boiled or baked.  For ice cream, I boil it and then cool the mixture in the freezer before putting the custard mixture in my ice cream maker.

I love to use my slow cooker in the summer so I do not heat up the house with my oven.  I especially love to use my slow cooker in the fall.  The smell of the slow cooker is awesome as it cooks all day. My work desk is just off the kitchen and I get to enjoy the smells all day :)

Slow Cooker Roast Beef

I have probably said this before but I will say it again..... I love using my slow cooker!  Especially with recipes like this one.  This morning I put my roast and carrots into the slow cooker and 8 hours later my meat and veggies were done.  I only had to make mashed potatoes and thicken up the broth out of the slow cooker to make my gravy.

Praline Pecan Pancakes

I started by making my go to regular pancakes.  I got the recipe from my Aunt Teresa.  I have made a slight adaption to the recipe by using whipping cream and milk.  She made cookbooks for everyone several years back.  On the recipe it says from BH Cookbook so I am guessing Better Homes and she has used this recipe since 1981.  It is a really good recipe!

Spiked Root Beer Ice Cream

 Happy National Ice Cream Day!  This weekend I made a new ice cream flavor.  It is made with Not Your Father's Root Beer.  The ice cream is more like soft serve I think because of the alcohol.  As you can see it started melting pretty quick after I scooped it into the dish.

Hummingbird Food

I love to watch the Hummingbirds eat out of the feeders.  The sound of them flying by you on the way to the feeder is a vibrating noise.  My favorite part of watching them is when you get 2 hummingbirds wanting to eat at the same time and they keep running each other off.  

I like to make my own food over buying the ready made as it will save you money. I also do not add red food coloring to mine and the birds still find my feeder and eat it just fine. 

Hummingbird Food

1 cup water
1/4 cup sugar

Microwave water until very hot ( I do mine for 3 minutes)
Stir in sugar until dissolved. Let water cool down to room temperature and then fill feeders
