I had been seeing Gingerdoodles floating around on facebook this season.  I love gingersnaps and the taste of molasses.  I took one of my favorite sugar/snickerdoodle cookies and added molasses and spices to make my new Gingerdoodles.  This will now be a traditional cookie at my house.

White Chocolate Vanilla Bean Toffee Cookies

These cookies are my absolute favorite cookie of all times.  

I was in Columbus several weeks back to take Billy for a follow up visit with the Surgeon.  While I was standing in CVS to fill a prescription I noticed this White Chocolate Vanilla Bean candy bar and immediately thought how good it would be in a cookie with toffee chips..... That is how this cookie started  


White Chocolate Vanilla Bean Toffee Cookies

2 ½ cups sugar
1 lb. (4 sticks) butter, softened
6 egg yolks
2 teaspoons vanilla
5 cups flour
2 teaspoons baking soda
1 teaspoon cream of tartar
8oz bag Toffee Bits
7 oz chopped Vanilla Bean Chocolate

Preheat oven to 350 degrees. Lightly grease cookies sheets or line with parchment paper.

Cream the sugar and butter until fluffy, about 3 minutes. Beat in the yolks and vanilla. Sift the dry ingredients together, then add to the batter in 4 parts, mixing well after each addition.  Add the Toffee bits and chopped chocolate.  Mix until well combined.

Form dough into balls or use a 2 tablespoon cookie scoop to form cookies. Roll in sugar (I used coarse Wilton Sugar)  and place on prepared cookie sheets. Bake for approximately 10-13 minutes. Cool cookies on a wire rack.

Buttermilk Oatmeal Cookies with Browned Buttercream Icing

I made cookies today for Billy to take home with him.  I love anything covered with Browned Buttercream Icing.  The smell is heavenly when I am browning the butter on the stove.  I just have to make sure I do not burn it because there is a big difference in the smell of browned butter and butter that is burning.


In this picture you can see the little flakes of browned butter.  While browning the butter it starts to get a little gritty so make sure you include the little pieces of grit into your icing, as it is the best part.

Billy and his roommate came home this weekend to go to the Detroit Auto Show with Bill.  They also went
snowmobiling last night as we have gotten several inches of snow over the last couple of days.  On Friday the weatherman was calling for less than an inch of snow here in Clark County, well they were wrong and we ended up with 4 inches.  Last evening it started snowing again.  I think the snow is going to hang around awhile here as it is suppose to get really cold again this week.  I hate the below zero temps!



The Buttermilk Oatmeal Cookies are a little dry if you eat them plain.  But with the icing they are really scrumptious. I think they would be really good to have with your favorite cup of coffee.  If you added raisins to the cookie dough I bet they would be moister.  I just am not a raisin fan.

Buttermilk Oatmeal Cookies with Browned Buttercream Icing  

cookies:
1 C sugar
1/2 C butter
1 egg
3/4 C buttermilk
1 t soda
1/2 t salt
1 t vanilla
1 t cinnamon
1 1/2 C flour
2 C Oatmeal

Icing:
1/2 C butter, softened
1/2 C browned butter
4 C powdered sugar
2 t vanilla
3T whipping cream

to make the cookies: Cream the sugar and butter until smooth.  Add buttermilk, vanilla, egg, soda, salt, and cinnamon, mixing well.  Add the flour and oatmeal and mix until well combined.  Scoop dough out onto greased or parchment paper covered baking sheets.  Bake at 375 degrees for 10 minutes, cooling on cookie sheets for 1 minute before removing to cooling racks.  Cool the cookies then ice.

to make the icing: Put 1/2 C butter in a small sauce pan and cook over med/high heat.  Cook stirring the butter until it gets a nice brown color with little specks of brown butter in the bottom of the pan.  Make sure to keep an eye on it as it can burn very easily while browning.

After browning the butter, let it cool off so it is not hot.  Then add the browned butter and softened butter to a mixing bowl and mix until well combined.  Next add the powdered sugar mix until crumbly.  While the mixer is running add the vanilla and whipping cream and continue to mix until the icing forms.  If it is too wet you can add more powdered sugar, too dry add a little more whipping cream.

I iced my cookies using Wilton Icing tip 1M.  I start in the center and swirl the icing around in a circle until I reach the outside edge of the cookie.  You can also just spread icing on top of the cookie using a knife.

Butterscotch Cookies with Burnt Butter Icing

A few weeks back a friend of mine (Hi Melissa) asked me for the recipe for Iced Amish Cookies. This was the recipe I thought of when she asked.  Ever since that day I have been craving these cookies.  They are super soft and yummy.  I love anything that has burnt butter icing on it.  Burning or Browning your butter gives the icing such a good flavor.  The cookies are so soft they remind me of cake.

Cally will be home this coming week for spring break.  Her and I have a trip planned to go to Amish County in northern Ohio next week.  We will be sure to take lots of pictures and sample lots of goodies so we can report back here next week when we return.

These Butterscotch Cookies With Burnt Butter Icing took 3rd place in 2008 for Best Cookie in the County at the Clark County Fair.

Butterscotch Cookies with Burnt Butter Icing

1/2 cup butter
1 1/2 brown sugar
2 eggs
2 1/2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon baking powder
1 cup sour cream
1 teaspoon vanilla

(To make sour cream, I add 1 T vinegar to cream)
Cream butter and add sugar gradually,  Add well beaten eggs.  Alternate flour, baking powder, soda and salt with the sour cream.  Add vanilla.  Chill.  Drop by teaspoon on greased baking sheet.  Bake at 375 degrees for 10 minutes

Icing
1/4 cup butter
2 1/4 powder sugar
1 1/2 teaspoon vanilla
2 tablespoons hot water

Brown butter in sauce pan and remove from heat.  Add the rest of the ingredients and frost cookies.

Sugar Cookies
Girl who ate Everything

1 C sour cream
2 C sugar
1 C butter
4 eggs
1 t vanilla extract
6 C flour
3 t baking powder
1 t baking soda
1 t salt

Preheat oven to 350 degrees

Combine sour cream, sugar, butter, eggs and vanilla.  Beat for 2-3 minutes

Add dry ingredients and mix well.  Let dough chill in fridge for 25 minutes or until firm.

Roll dough out until about 1/4 inch thick and use cookie cutters to make shapes or circles

Bake until light golden brown, about 8-10 minutes (I baked for 8 minutes)

makes about 4 dozen

Dream Whip Frosting:

1 oz package of dream whip
1/2 C cold water
2 t vanilla
1 T butter
3 T whipping cream
2 C shortening
2 lbs powdered sugar
1 1/2 t almond flavoring

Combine dream whip, water, vanilla and almond flavoring with a mixer until combined on low, increase speed to high and whip until mixture begins to look fluffy.

Add shortening, whipping cream and butter.  Combine with mixer on low speed, scraping sides of bowl as needed.  Once combined mix on high for approximately 2 minutes.  It should look like frosting at this point.  Add powdered sugar, 1 cup at a time, mixing on low speed after each addition.
