Spiked Root Beer Ice Cream

 Happy National Ice Cream Day!  This weekend I made a new ice cream flavor.  It is made with Not Your Father's Root Beer.  The ice cream is more like soft serve I think because of the alcohol.  As you can see it started melting pretty quick after I scooped it into the dish.

The ice cream taste just like the beer.  It does have a hint of an alcohol taste but not too much.  It reminds me of the root beer I had as a child from the root beer stand.  Oh those were the days, I loved going to the root beer stand and getting a frosty mug of draft root beer.  Us kids always thought it was cool to stay in the car and the server bring our drinks and food out and hang the tray on the front window.


I noticed right out of the ice cream maker the ice cream was not set up as well as my other recipes have been.  Because alcohol does not freeze well the ice cream was pretty runny but it did freeze up so that I could scoop it into my dish.

Spiked Root Beer Ice Cream

1 cup whipping cream
1 cup Italian Sweet Cream Coffee Creamer
1 cup Not Your Fathers Root Beer
1/4 cup brown sugar
1/4 cup white sugar
4 tablespoons vanilla instant pudding
1 teaspoon vanilla
1 teaspoon root beer concentrate

Mix everything together in a bowl and stir until smooth.  Pour ice cream mixture into ice cream maker and churn according to manufacturers directions.

I used a Cuisinart and I churned mine for 20 minutes.


After done churning ice cream is still pretty soft.  Pour into a freezer proof container and cover tightly.  Freeze for 8 hours or over night.
