Quick and Easy French Toast

I have found the perfect French Toast Recipe.  
This recipe comes from McCormick.  It is so simple I am not sure why I have not tried it before.  I put my french toast on the griddle with butter but you could easily put this in the oven also.  


Today is our 28th Wedding Anniversary.  Bill and I went to Portsmouth and spent the day with Cally today.  Cally will be graduating in 3 weeks from Shawnee State University so we decided to make our last day trip down to go see some of our favorite places that we have found over the last 4 years.This picture is taken behind the flood wall by the Ohio River in Portsmouth. Even though this was graffiti I loved it.


Raven Rock has been one of Cally's favorite spots while she has been down in Portsmouth.  We had not hiked it until this visit.  It took us almost an hour hiking up the mountain.  After taking our pictures and seeing the awesome sight it was decided to take the short way down.  It would only take about 15 minutes to get down.  I found out why it was only 15 minutes as it was almost straight down the other side of the mountain.  It was steep and scary but I only fell once :)

Bill climbed up from underneath the over hang.  In the next picture you can see Bill and Cally looking up through this hole.




I also would not walk out on this Natural Bridge either.  Cally is a daredevil just like her dad.  I am the chicken of the family.



It was such a beautiful day today.  We could not have asked for better weather.  Here we are behind the flood wall and down on the edge of the river.  Cally has gotten to enjoy these views of the river for the last 4 years.  She will soon be back home and hopefully have gotten herself a teaching position at a local school in our area.


Quick and Easy French Toast

1 egg
1 teaspoon vanilla
1/4 cup milk
1 teaspoon cinnamon, divided
2 teaspoons sugar
4 slices bread ( I laid my bread out covered with a towel overnight to get a little stale)

In a small bowl combine the sugar and 1/2 teaspoon cinnamon to make cinnamon sugar, set aside

In a bowl combine egg, vanilla, 1/2 teaspoon cinnamon and milk. Mix with a fork until well combined.  One at a time soak the bread on both sides in the egg mixture.  Place the soaked bread in a skillet or griddle with melted butter.  On the top side sprinkle with cinnamon sugar, once the first side is browned flip the french toast over and sprinkle the the cooked side with cinnamon sugar.  I then flipped my french toast over a few more times to get each side nice and cinnamon sugary browned. If you desire you can sprinkle with powdered sugar and serve with warm maple syrup... enjoy!
