Funfetti Cotton Candy Cupcakes
For Christmas Billy and Amanda gifted me a new cookbook… Cake Confidence by Mandy Merrimack. I have picked up a lot of new tips for making cakes and cupcakes. One tip I had never thought of doing was to mix your cakes and cupcakes by hand with a whisk rather than a mixer. Doing so for your cakes helps make the cakes bake even. When I made Melvin’s Trash Truck Cake I did not have to level my cake rounds at all, they were perfectly level right out of the oven.
I made 4 different flavors of cupcakes this weekend to take to a family gathering. I will be sharing these other flavors in upcoming posts.
The cotton candy flavoring that I used in the icing I purchased on Amazon but I bet you can buy other Cotton Candy flavorings or extract.

Funfetti Cotton Candy Cupcakes
Cupcakes recipe adapted from Baking With Blondie
1 box Duncan Hines white cake mix
2/3 cup sour cream
3/4 cup buttermilk
1 tablespoon vanilla
2 eggs
1/3 cup oil
1/2 cup sprinkles (rainbow jimmies)
Preheat oven to 325 degrees using convection setting. If not using the convection setting heat oven to 350 degrees. In a separate bowl combine sour cream, buttermilk, oil, vanilla and eggs. Stir until combined, set aside. Pour cake mix and sprinkles into a large mixing bowl and add the wet ingredients. Mix until combined with a wire whisk.
Divide batter in cupcake pan lined with papers. Bake for 15-18 minutes (mine took 15 minutes). Cool completely and ice with Cotton Candy Buttercream or your favorite icing.
Cotton Candy Buttercream

2 sticks butter, softened
1 package dream whip
8 tablespoons heavy whipping cream, divided
1 tablespoon cotton candy flavoring
4 1/2 cups powdered sugar
In a mixing bowl add the softened butter and cream until fluffy. Add in dream whip and mix. Add 4 tablespoons whipping cream and cotton candy flavoring and mix well, scraping down the sides of the bowl as needed.
Turn mixer to low speed and add 1 cup of powdered sugar and 1 tablespoon of whipping cream and mix until combined.
Add another cup of powdered sugar and 1 tablespoon whipping cream (this is cup 2 of the powdered sugar).
After this is combined add another cup of powdered sugar and 1 tablespoon of whipping cream (this is cup 3 of the powdered sugar).
Add another cup of powdered sugar and 1 tablespoon whipping cream (this is cup 4 of the powdered sugar).
Mix again until combines and then add the last half cup of powdered sugar. After this half cup is mixed in turn the mixer up to full speed and mix icing for 2 minutes.
