Chicken Noodle Soup

This Chicken Noodle Soup sure does hit the spot on a cold winter day!  It is a super easy recipe to make.  I have been buying rotisserie shredded chicken from my grocery store.  It's nice to be able to buy my chicken already cooked and shredded but feel free to use your own cooked and shredded chicken.


Chicken Noodle Soup

1 lb cooked chicken
1 bag noodles
8 cups water
8 t chicken soup base
3 carrots, sliced
3 stalks celery, sliced
salt and pepper to taste

Put water and chicken soup base in a big soup pot and bring to a boil.  Add carrot and celery slices and cook until they are starting to get tender then add in the noodles.  Continue cooking until the noodles are soft.  Add in the cooked chicken and continue to cook until the chicken is hot.  Serve with crackers if desired.

You can also serve this as chicken and noodles over mashed potatoes by using a slotted spoon to reduce the broth from the noodles when putting them over your potatoes.
