Chocolate Covered Pretzel Caramel Ice Cream Pie with Sea Salted Caramel Sauce

Now that title is a mouthful!   I guess I could just call it ice cream pie but you would not know all the goodies that make up this pie without the long title.

This was a big weekend at the Jones house.  I made this treat for Bill's 50th Birthday on Friday.  He did not get to enjoy a piece of it until Saturday though because he called called out to an Aldi's right after we finished supper on Friday.


Cally and I took a road trip on Friday to Amish Country in Holmes County Ohio.  We have several places we always stop at each time we visit.  One of them is Hershberger's.  At this stop we bought our Fry Pie (blackberry, peach, lemon, apple and blueberry were the ones we chose today) a loaf of cinnamon bread (still warm in the package) dinner rolls (also still warm in the package as you can see above) sweet corn, zucchini, peaches, blackberries (I made blackberry cobbler today) and we shared an Amish Chocolate iced Bavarian cream filled donut (best donut I have ever had) .  Outside of the store they have picnic tables set up so you can sit down and enjoy your goodies that you purchased if you would like.  While sitting there enjoying our donut my Aunt and Uncle walked up.  Aunt Gerl and Uncle Roy.  I have not seen them in ages so it was nice to sit for a few minutes and get to visit.


We also stopped at another favorite store, Heini's Cheese.  I did not realize they had a website until I just looked at my cheese packages to make sure I spelled the store name correctly.  If you would like to take a look at the website, click here.  The best part about visiting Heini's is they have cheese samples set out for all their different cheese flavors and they probably have 40 or 50 different varieties/flavors.  I took this picture above from Heini's parking lot.  Down below them is this Amish farm and they happened to be baling hay.  You can not see her but there is a girl on the other side of the wagon and she is working in her dress.  She is walking along the side of the hay wagon and picking up the bales and tossing them on the wagon.  She was a strong girl!  Every time we visit Amish country you always see the Amish hard at work.


A few more of our favorite stores are Walnut Creek Cheese, Charm Boot Store and the Antique Barn in Berlin.

For this treat I made a new flavor of ice cream.  It is a Caramel ice cream with chocolate covered pretzels.  After it was done churning I poured it into my spring form pan that had a pretzel crust in it. I put it in the freezer overnight and then removed the sides of the pan to slice the pie.  The pretzel crust was breaking up as we ate it but it still tasted awesome with the sweet and salty pretzel crumbs.

Chocolate Covered Pretzel Caramel Ice Cream Pie with Sea Salted Caramel Sauce

ice cream
1 1/2 cups whipping cream 
1 1/2 cups Italian Sweet Cream coffee creamer
1/2 cup sugar
3.4 ounce instant vanilla pudding
1 teaspoon LorAnn Caramel Delight Flavor Fountain
1 cup chopped chocolate covered pretzels

Mix everything except the chocolate covered pretzels together.  Place mixture in freezer for 20 minutes.  Take out of freezer and churn in ice cream maker per manufacture instructions.  With about 5 minutes to go put the chopped chocolate covered pretzels into the ice cream maker.  Pour the ice cream into the spring form pan on top of the pretzel crust.  Cover spring form pan and place in freezer for 8 hours or overnight.  Remove the sides and cut cake into slices.  Garnish with whipping cream and more chocolate covered pretzels.

Pretzel Crust

2 cups chopped pretzels
1/2 cups sugar
1/4 cup melted butter

Mix everything together and press into a spring form pan.  Place in freezer for about 20 minutes before pour ice cream into the pan.


 Sea Salted Caramel Sauce

15 Kraft caramels
1 tablespoon sour cream
sea salt to sprinkle on top

I place the unwrapped caramels and sour cream in a microwave safe bowl.  I melt the mixture for about 30 seconds and then stir.  Mine was melted in the 30 seconds but if not continue to microwave in 10 second intervals until nice and melted.  Spoon melted caramel over the slice of pie and sprinkle with sea salt.
