New Years Eve Appetizers

Tonight is the big night, Saying Goodbye to 2015 and Hello to 2016.  Cally is especially excited to get 2016 underway as this is her big year to Graduate from Shawnee State University.  Yay Cally!

Looking back over 2015 was a big year for Billy.  As you remember he graduated from The Ohio State University and has moved to Lexington, KY.  He and Amanda have since moved from their original apartment because of the previous one remodeling and have now settled into a larger apartment.  They and their 2 dogs are doing great.

I am writing this post as I prepare my appetizers for the celebration tonight.  I will add more pictures as I go along through out the day.  I wanted to go ahead and get the recipes on the blog in case anyone is looking for last minute easy appetizers for your celebrations tonight.


Cheese and Sausage Stuffed Mushrooms

8 ounces cream cheese
1 cup cooked sausage
1 cup mozzarella cheese
1/2 cup parmesan cheese
16 ounces mini mushroom caps
4 tablespoons butter


Preheat oven to 350 degrees

Take the stems out of the mushrooms and set aside.

Put 4 Tablespoons of  butter into a pie plate or baking dish and place in the oven to melt.

Place the mushrooms top side down into the butter dish and bake for 10 minutes.

meanwhile:
Combine cream cheese, sausage, mozzarella cheese, parmesan cheese together and mix with a mixer until well combined.

After taking mushrooms out of the oven,  Spoon Sausage Cheese mixture into the mushrooms.

Place back in the oven for 20 to 25 minutes or until the cheese is nice and bubbly.

Cocktail Meatballs and Sausages

1 pound frozen meatballs
14 ounces cocktail sausages
12 ounce Chili Sauce
18 ounce Grape Jam

Thaw meatballs either in the refrigerator or microwave.  To a slow cooker add all ingredients and turn on low.  Cook on low until sauce is meted and everything is nice and hot.  I would say probably 4 hours.  ( if you are in a hurry and did not start this 4 hours ahead, You can either heat everything in the microwave or on the stove top and then just pour into your slow cooker to keep warm during your celebration )

Dried Beef Cheese Ball Dip

8 ounce cream cheese, softened
8 ounces dried beef, chopped
1 to 2 teaspoons Worcestershire Sauce (according to your taste)
1/2 teaspoon onion powder (can also use chopped onion if prefer)
1/4 teaspoon black pepper
3/4 cup sour cream

Combine everything in a bowl and mix until well combined.  If you have time make ahead and place in refrigerator so all the flavors can combine for an awesome taste.  If in a hurry it is still ok to mix up and serve.  I serve with Frito Scoops but crackers are delicious too!

Mexican Dip

16 ounces Velveeta Cheese, cubed
10 1/2 ounce can Cream of Mushroom Soup
10 ounce can Ro*Tel Mild Diced Tomatoes & green chilies
1 package Jimmy Dean (fully cooked) Sausage Crumbles (or 1 pound cooked sausage)

Put everything in the slow cooked and turn on low for 4 hours or until it is nice and Cheesy.  You can serve with Fritos Scoops or tortilla chips.
