Tuna Egg Salad

Have left over Easter eggs?  I have an idea ........ make Tuna Egg Salad!

I have always thought this was called Egg Salad but I guess if you put tuna in yours it is a Tuna Egg Salad lol.  Whatever you call it, this easy salad is good!



I hope everyone had a Happy Easter.  We sure did at our house and the weather was perfect.  I can not remember when the last Easter was that I had the windows open and we were able to sit outside.  You never know in Ohio, we can have snow or we can have warm days on Easter.

For our Easter dinner we had ham, scalloped potatoes, cinnamon spice sweet potatoes, corn, green beans, broccoli and cauliflower salad, 5 cup salad, deviled eggs, pies and fruity pebbles marshmallow treats.  I made the main meal dishes ( well I can not take all the credit Cally helped me with just about everything), my mother in law made our awesome pies (chocolate, lemon and coconut cream) and deviled eggs, Amanda made the super delicious fruity pebble marshmallow treats.  These were not just delicious but the colors in the cereal made them a festive Easter dessert.  I hope everyone was able to enjoy a nice Easter Day!



Well if today you find yourself with some left over hard boiled eggs then you could make this Tuna Egg Salad.  Or if you do not have Tuna you can just make Egg Salad!

This was the first time I had tried pita pockets.  With this salad they were nice.  I could pile in the salad and not worry about it falling out the bottom when I picked it up to eat.  Now I am not sure I would ever use them for say a Peanut Butter Sandwich but for messy sandwiches they work great.

I used half light mayonnaise and half miracle whip but you can use 1 cup of either of your favorite in place of half and half of each.


Tuna Egg Salad

12 hard boiled eggs, chopped
1/2 cup light mayonnaise
1/2 cup miracle whip
12 ounce can Tuna
1 tablespoon Honey Dijon mustard
1 tablespoon honey
1 tablespoon yellow mustard
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper

Put all ingredients into a bowl and mix with a fork until well combined.  I like to refrigerate my salad before serving but feel free to go ahead and dig right in if you would like :)

I even like this salad served with crackers.  You could also put it on top of some lettuce leaves for a nice lighter touch.
