Chocolate Chunk Peppermint Stick Ice Cream

I say this a bunch but man I really think I have found my new favorite ice cream.  Peppermint is a favorite candy flavor of mine.  Then add chocolate and I am in heaven!




I am also loving my Mothers Day sign from Billy and Amanda.  You will probably see it more in my future posts.


In the picture above you can see the peppermint candy I used.  The candy is chalky and will melt in your mouth and it also melted when I was churning the ice cream so there are no peppermint pieces in the ice cream when it is done.  I would think you could use regular peppermint, like candy canes, and my guess is you would end up with chunks of peppermint in your ice cream.


Today we had a surprise out in front of the house.  We have seen other fields being crop dusted in the past but never had we had the one in front of our house done, well that is until today.  It was a sight to see!


Because of the power lines he had to be careful of which way he was approaching the field to dust.  I went on out in the front yard and at one point he flew right over me.



Chocolate Chunk Peppermint Stick Ice Cream

ingredients:


  • 2 cups heavy whipping cream
  • 1 1/2 cups half and half
  • 3/4 cup sugar
  • 1 tablespoon vanilla
  • 3/4 teaspoon peppermint extract
  • 5 ounces peppermint candy, crushed
  • 3 1/2 ounces chocolate bar, chopped

instructions


  1. Crush peppermint candy ( I used my blender)
  2. Chop up the chocolate bar into chunks (I used 1/2 of a large 7 ounce bar)
  3. Mix together heavy whipping cream, half and half, sugar, vanilla and peppermint extract. ( I used my blender to mix together)
  4. Pour ice cream mixture into ice cream maker and churn according to manufacturer instructions. 
  5. Add in the peppermint pieces after about 5 minutes of churning
  6. Add the chocolate chunks in half way through
  7. After the ice cream is done churning, pour into an air tight container and put in the freezer for 8 hours or overnight.
