Duncan Hines Spice Cake Mix is what makes this recipe super easy... that and a few more ingredients is all it takes.
I love when I can cheat a little by starting with a cake mix, add a few more ingredients and you have an easy and fast dessert in no time.
The bread was so good! It was super moist and not too sweet, the cake mix had the perfect amount of spice flavor. You could always use whatever milk you have on hand, I had left over buttermilk in the fridge from Cally making me a peanut butter cake last week. I also thought the buttermilk might make it more moist, but that also could be from the shredded zucchini too.
After I shredded my zucchini I squeezed as much water as I could out of it before adding it into the mixing bowl.
I also served our bread with cinnamon sugar butter. It sounds fancy for something that was easy to mix up. All I did was take a stick of soft butter and mix in cinnamon sugar but it did have a scrumptious look to it with the specs of cinnamon in the butter!
Spice Zucchini Bread
ingredients:
- 1 box Spice Cake Mix ( I used Duncan Hines)
- 1/2 cup oil
- 1/2 cup buttermilk
- 3 eggs
- 1 small box instant vanilla pudding
- 2 cups shredded zucchini
- 1/2 cup chopped pecans
instructions
- Preheat oven to 350 degrees
- Mix together cake mix, oil, buttermilk, eggs and vanilla pudding
- add zucchini and pecans and mix until combined
- Pour into 2 greased and floured 8x4 inch loaf pans
- Bake for 40-45 minutes or until toothpick inserted in middle of load comes out clean
