Coffee Cake Pancakes with Powdered Sugar Glaze

We sure had a busy Easter weekend.  It started out Saturday by Billy, Bill and I traveling to Lexington Kentucky to find Billy an apartment.  Billy is graduating from Ohio State next month and has accepted a job as a 2nd Assistant Superintendent.  We found a place and soon we will be moving him from Columbus to Lexington.  It is an exciting time in our family.  I am happy for Billy but sad to see him move 3 hours away.




Then on Easter Sunday we had dinner at our house.  It was a beautiful day spent with family!

Tonight for supper we had breakfast.  If I can not think of something to have or if I want something fast we have breakfast.  I always have bacon, eggs and then either pancakes, waffles or french toast. Tonight I wanted something different.  I love coffee cake and thought coffee cake pancakes sounded good.  Why not if try it, if people put chocolate chips in pancakes then I can put cinnamon streusel on top of mine.  I also made a powdered sugar glaze to pour over the pancakes instead of maple syrup.
Oh my goodness these pancakes were so awesome.  Tasted like eating a piece of coffee cake.  I will definitely be having these again.

Coffee Cake Pancakes with Powdered Sugar Glaze

Streusel topping
1/2 C flour
1/2 C brown sugar
1/4 C oil
1/2 t cinnamon
1/2 t nutmeg

Mix streusel together and set aside

Pancake batter
1 1/3 C flour
3 t baking powder
2 T sugar
1/2 t salt
1 beaten egg
1 C milk
2 t oil

Combine egg, milk and oil and add to the dry ingredients.  Mix together until moist.  Put about 1/2 C batter on hot butter griddle.  Sprinkle the streusel topping on top of pancake.  Cook pancake for about 3 to 4 minutes or until cooked on the underside.  Flip pancake over and sprinkle the new top with the streusel.  I pushed mine down a little to get the streusel to stay on top.  Finish cooking your pancake until it is done.  Place on your plate with the crumbly struesel side up.  The bottom struesel will cook up into the pancake after you flip it.  Mix together the Powdered Sugar Glaze and pour it over your pancake in place of syrup...YUM!

Powdered Sugar Glaze
2/3 C powdered sugar
2 T milk (more if you want your glaze runnier)
splash of vanilla

Mix together and pour over pancakes
