You have probably noticed I have not posted in awhile. I have been extremely busy with my family the last couple of weeks.
Last Saturday Bill and I took the corvette to a car show. There were 250 cars at this all corvette show. We won a top 100 trophy.
Sunday we had a long and busy day. It started out early when my parents picked us up for Billy's OSU Graduation. First we stopped at Budget Rental and picked up a moving truck. We then dropped the truck off at Billy's apartment. Graduation was at 12 pm but we went to the stadium 2 hours early because OSU graduated over 11,000 students this year. Boy was graduation a long event.
After graduation we all loaded Billy's stuff in the moving truck, stopped for supper and then headed home. We slept here at home Sunday night. Woke up early on Monday and we were back in the moving truck and headed to Lexington to set up the new apartment. Bill and I stayed Monday night and helped Billy get everything set up and went shopping for a few items and groceries before we headed home on Tuesday afternoon. It sure was hard leaving Billy down in Lexington all by himself but it is getting a little better each day. Billy started his new job on Wednesday and has had 2 very long days so far. The golf course is getting ready for a tournament tomorrow.
Bill and I both went back to work on Wednesday and have been trying to get caught up around the house since we were not here over the weekend. Last night we had a quick supper since I had to go to the store before we could eat. Tonight I made this Ravioli Deep Dish Lasagna.
Bill and I ate at BJ's Restaurant Brewhouse on Sunday traveling home. I saw a Deep Dish Lasagna on their menu. The dish said it was made with Cheese Ravioli. I thought it sounded amazing and super easy to do. This is my version of Deep Dish Lasagna.
In the pictures above you can see I assembled it just like you would lasagna. The first layer was the cheese ravioli, 2nd layer Italian sausage, 3rd layer spaghetti sauce, 4th layer shredded cheese. Then repeat. I ended up stacking 3 layers into my pan.
I used some homemade spaghetti sauce that I had in the freezer but you can always use jar sauce and it will be just as good.
I loved using cheese ravioli in place of lasagna noodles and ricotta cheese. This dish was amazing!
Ravioli Deep Dish Lasagna
1 package frozen ravioli (24 ounces)
1 pound Italian Sausage, browned and drained
1 jar spaghetti sauce (26 ounces)
4 C shredded Italian cheese
Boil cheese ravioli until tender and drain. Brown Italian sausage and drain. Start layering the lasagna in a 8X8 deep dish pan. Layer cheese ravioli, Italian Sausage, spaghetti sauce, and shredded cheese. Continue adding layers until all ingredients are used. I had 3 layers in my pan. Bake in a 400 degree oven for 20 to 30 minutes or until it is hot and cheese is melted.
You can use the spaghetti sauce of your choice. I used some of my homemade sauce that I had in the freezer but if you are in a hurry you can just use jar sauce and it will be just as good.
