I have started a new adventure in my life..... I joined Weight Watchers online.
I have been over weight all my life. In high school I did Diet Workshop and lost a lot of weight only to gain it back plus more as I got older.
A few years back I was diagnosed with Type 2 Diabetes. So for no other reason than that I really should have taken more action then. I have been trying on my own and I have lost 20 pounds since last summer but I seem to have plateaued.
With Billy and Amanda's wedding coming upon us quickly ( October ) I decided to try Weight Watchers. My doctor had been on me for years to give it a try and I never thought too much about it until Cally brought it up. So on Monday last week I signed up online..... So my adventure begins
Banana Pancakes
recipe slightly adapted from: No. 2 Pencil
2 mashed bananas
2 egg whites
1/2 cup skim milk
1 teaspoon vanilla
1 cup vanilla Greek yogurt
1 cup flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
In a medium bowl combine the mashed bananas, egg whites, milk, vanilla, and yogurt. Mix until well combined.
Add the dry ingredients and mix well.
Drop 1/4 cup pancake mix on hot non-stick griddle.
Yields 14 pancakes at 1 point each
