Tonight for supper we had Spaghetti Squash topped with Italian Sausage Sauce. The last couple of weeks we have had spaghetti squash in place of the spaghetti pasta. I can honestly say I do not miss the pasta..... I love spaghetti squash and the best part it is 0 points on weight watchers!!!!!
My weight watchers journey has been pretty good so far. I have lost 8 pounds. I did not lose any last week but I think it was for my lack of going to the gym/walking. So far it is by far the easiest plan I have tried to lose weight on. I would not really call it a diet. I just have 30 points a day and I have to decide what I want to spend my points on. I will tell you that I now look at things and say no way I am not going to use that many points for that. So it really does make you think about your choices.
To fix the spaghetti squash, you first cut the squash in half lengthwise. Scrape out all the seeds and discard. It is almost like cleaning out a pumpkin :) Next place the halves of squash on a cookie sheet. Drizzle the insides of the squash with olive oil and then salt and pepper. Turn squash side down on the cookie sheet.
Bake squash at 350 degrees for 1 hour. Remove from oven and be careful as the squash is really hot. Turn each half over and scrape out the insides with a fork. The squash will release from the sides and look like spaghetti....Yummy! Place on a dinner plate and top with sauce.
Spaghetti Sauce with Italian Sausage

56 ounces crushed tomatoes
1 tablespoon tomato paste
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon Italian seasoning
1 teaspoon salt
4 tablespoons Splenda, granular
2 bay leaves
5 Johnsonville Italian Sweet Sausage links
1. remove casings from sausage links and brown, drain and set aside
2. In a large sauce pan combine crushed tomatoes, tomato paste, onion powder, garlic powder, oregano, Italian seasoning, salt, splenda and bay leaves. Simmer for 15 minutes
3. Add the Italian sausage and continue to simmer sauce for another 15 minutes.
4. remove bay leaves and serve over spaghetti or my favorite spaghetti squash with bonus 0 points!
Serving size is 1 cup. Weight Watcher points are 5 for the sauce and 0 for the squash
