7up Jello Poke Cake --- Sugar Free

I am still doing my Weight Watchers and can honestly say this is the easiest program I have ever done to lose weight!  So far in 29 days of following the plan I have lost 13 pounds!  I have been revamping some of my favorite desserts so they are point friendly.


My latest creation is one of my favorite summer desserts.  Jello Poke Cake!  In my lighter version I have used a sugar free cake mix, diet 7 up, sugar free jello and also sugar free cool whip along with a few other ingredients to make this a healthier version and one I can enjoy and not have to worry about using a half a days worth of points on :)

Tonight I am going to make a light version of Chocolate Chip Cookies.  I found sugar free chocolate chips at the grocery store yesterday.  I am excited to try this recipe!  I will post pictures on my Instagram (click her to go to my instagram page) after I have them made and let you know how they are and if they pass the taste test I will post the recipe here later this week.

The cake is baked in a 9x13 pan.  The serving size is 1/12th of the cake for 6 points.  Even if you are not following a diet plan this cake recipe is good for anyone who would like to cut back on their sugar.  I really like the taste of the cake and it is sweet enough but it does not taste as sweet to me as if it did have all the extra sugar.


Sugar Free 7up Jello Poke Cake

1 box Pillsbury Sugar Free yellow cake mix
1/3 cup unsweetened apple sauce
3 eggs
2 cups diet 7up soda, (1 cup for the cake and 1 cup for the jello)
3 ounce box sugar free lime jello
8 ounce tub sugar free cool whip

In a large mixing bowl combine cake mix, unsweetened apple sauce, eggs and 1 cup of diet 7up soda.

Mix on low until all combined then on high for 2 minutes.

Pour batter into a greased and floured 9x13 baking pan.  Bake at 325 for 34-38 minutes.

Cool cake completely, poke holes in the top of the cake with fork.

Make the jello, dissolve the jello mix into 1 cup of boiling water.  Then add 1 cup of diet 7up.

Pour jello mixture over entire cake and refrigerate for at least 1 hour.  Top cake with Cool whip.

Store cake in the refrigerator.
