Mustard Potato Salad

It's almost the 4th of July.  We love having cookouts for the 4th celebration.  When we have a cookout I like to make traditional picnic food!




I do not like crunchy things in my potato salad.  This is why you will see that I use onion powder and celery seed instead of cutting up onions and celery as an ingredient.  However if you are one of the many who do like onions and celery feel free to use fresh and dice them up for your salad.

Mustard Potato Salad

ingredients:


  • 2 pounds potatoes, peeled and cubed
  • 6 hard boiled eggs, chopped
Mustard Sauce
  • 3/4 cup miracle whip
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon celery seed
  • 3 tablespoons yellow mustard
  • 2 tablespoons sweet relish
  • 2 tablespoons sugar
  • 2 teaspoons white vinegar

instructions


  1. Boil cubed potatoes until tender but not mushy,  Drain,  rinse with cold water and let cool
  2. Mix sauce ingredients together
  3. In a large bowl toss together the potatoes and eggs, Pour mustard sauce over and stir until well coated
  4. Refrigerate and serve cold
