Frosted Confetti Cupcake Poptart Cookies

Frosted Confetti Cupcake Poptart Cookies
I have discovered my new favorite Poptart flavor!  I had no idea there was a Cupcake flavored poptart. Yesterday I made this new cookie creation to drop off for the church staff.  This was a new recipe experiment, but I would say it was a success 🧁  Bill approved 😉
I added chopped up Frosted Confetti Cupcake Poptarts to the batter and put a bigger piece on top of the cookie.  This way the cookie has the Cupcake flavor along with getting a big bite of Cupcake flavor on top.  Not to mention I think it looks cute with a poptart sitting on top of the cookie.
Instead of using vanilla extract, I used McCormick Cake Batter flavor.  The cookies really picked up the cake flavor.  Not sure why but the flavoring has added food coloring which made the cookies turn yellow.  In my opinion McCormick could leave out the yellow and red food coloring!


Frosted Confetti Cupcake Poptart Cookies

 Yields 52 cookies


1 ½ cups Butter, softened

2 ¼ Sugar

3 eggs

2 teaspoons Cake Batter flavoring

4 ½ cups Flour

1 teaspoon baking soda

1 teaspoon cream of tartar

½ teaspoon salt

6 Frosted Confetti Cupcake Poptarts (chopped for batter)

3-4 Frosted Confetti Cupcake Poptarts (chopped bigger for cookie tops)

½ cups confetti sprinkles (extra if you wish to sprinkle over chocolate drizzle)

½ cup White chocolate chips for drizzle (optional)

 

Preheat oven to 350 degrees

 

In a mixing bowl cream the butter and sugar.

Add the eggs and cake batter flavoring, mix until combined.

Add the flour, baking soda, cream of tartar and salt just until combined

Lastly add the chopped poptarts and sprinkles 

Place cookie balls on parchment covered baking sheets and bake for 10-12 minutes 

After cookies are cool, if you wish melt the chocolate chips and put either in a plastic icing bag or a zip lock bag (chocolate will be hot) and drizzle over the cookies.  You may also wish to top the chocolate drizzle with additional sprinkles.

I might have baked mine a tad too long as they are pretty crisp on the outside but still somewhat softer on the inside. I baked mine for 11 minutes but think 9-10 minutes might be better.
