Sea Salt Snickerdoodle Skillet Cookie
My new skillet is a Christmas gift from Bill, Amanda and the grandkids. I love using a cast iron skillet.
When I bake in a cast iron skillet, it reminds me of my Grandma Sowards. She used her cast iron skillet probably every day. The one thing I remember her baking in her skillet was cornbread. Oh, there is no cornbread out there that even comes close to the corn bread my grandma made. We used to break the bread up in a glass of milk and eat it with a spoon and then drink the milk. I can taste it as I type this up!
I hope Melvin and Olivia eventually have a favorite that I make and when I am gone, they will think of me when they have it. Melvin's might end up being my Orange Salad 😊
For the Cinnamon Sugar topping, I used my vanilla infused sugar. I made this for a craft show that Cally and I did. It is super easy to make. I added vanilla paste to sugar then spread it out on a baking sheet. You can let the sugar dry out or also put it in the oven on low heat and let it dry out.
This cookie is so soft and buttery well except the edges along the pan are crisp. I had just pulled it out of the oven when Bill walked in from work. The kitchen smelled so good! Bill loves the edges of brownies, so I know the edge of this cookie is going to be his favorite.
Sea Salt Snickerdoodle Skillet Cookie
1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla
2 3/4 cups flour
1 1/2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon cinnamon
Cinnamon Sugar Topping
3 Tablespoons sugar (I used vanilla infused sugar)
1 Tablespoon cinnamon
1/2 teaspoon sea salt
Mix all ingredients together and set aside
Preheat oven to 375 degrees. Spray a 10.25-inch skillet with cooking spray.
Cream butter and sugar until combined. Add eggs and vanilla and mix again until combined.
Add the dry ingredients, flour, cream of tartar, baking soda, sea salt, and cinnamon and mix just until it is all combined.
Press the cookie dough into the greased skillet. I pushed mine down into the pan using parchment paper and my smashburger smashing tool.
Sprinkle the top of the dough with the cinnamon sugar. Bake in 375-degree oven for 25-30 minutes. Mine took 30 minutes
