When Cally made these Strawberry Lemonade Cookies for the market, I was intrigued by the flavor. This cookie became an immediate favorite of mine 🍋🍓 I am a lemon lover through and through 🩷
Not only was this my new favorite cookie it was a huge hit at the farmer's market. She had requests for these cookies.
This past weekend at Medway Church they held Starting Point to help welcome new people into the church. I was asked if I could make cookies for this event. The Strawberry Lemonade Cookie was one of the cookies that I baked for them. In the above picture there is also Cracked Sugar Cookies, Strawberry Poptart Cookies and Sprinkle Sugar Cookies (these recipes are to come 😃)
Since retiring I have started baking a lot of cookies. I like to bake cookies and take them to the church every so often as a treat for the church staff. A New Years Resolution this year is to expand out and start blessing others with my cookies. I would like to start dropping cookies off to other places like Firehouses, Police Departments, Doctors offices and maybe Nursing Homes .... to bless those who take care of others 💗
Strawberry Lemonade Cookies
from Best Cookie Recipes
Lemon Sugar Cookies
1/2 C butter, softened
1/2 C granulated sugar
1/4 C oil
1/2 C powdered sugar
1 egg
1 teaspoon Lemon Emulsion (or lemon extract)
1 Tablespoon Lemon Zest
1/2 teaspoon baking soda
1/2 teaspoon Cream of Tartar
2 C flour
Yellow food coloring (optional)
Infused Sugar
2/3 C sugar
1 Tablespoon Lemon Zest
Strawberry Cookie
1/2 C butter, softened
1/2 C granulated sugar
1/4 C oil
1/2 C powdered sugar
1 egg
1 teaspoon Strawberry Extract (or strawberry emulsion)
1/2 teaspoon baking soda
1/2 teaspoon Cream of Tartar
2 C flour
Pink food coloring (optional)
Infused Sugar -
in a small bowl combine 2/3 C sugar and 1 Tablespoon lemon zest. Stir to combine and set aside.
Preheat your oven to 350 degrees and line baking sheets with parchment paper
Making Lemon and Strawberry Cookies -
Make each batch of cookies separately
In a large bowl cream butter and granulated sugar - cream for 2-3 minutes scraping down the sides of the bowl as needed. Mixture will be light and fluffy.
Mix in the egg and extract
Add oil and powdered sugar and lemon zest (for the lemon version), and mix
If using the food coloring add it to the butter mixture before adding the dry ingredients (Cally did not use food coloring in hers but for the church, I added a small amount to brighten the colors up)
Mix in flour, baking soda, and cream of tartar until combined
Set Lemon dough aside and repeat for Strawberry Cookie dough
using a cookie scoop, scoop half of each dough to fill the scoop. I did not worry about the 2 doughs blending together, I scooped a little of one dough and then filled the scoop up with the next dough to create a half and half flavored ball.
Roll cookie dough ball in the Lemon infused sugar and place on parchment covered baking sheet.
Bake at 350 degrees for 8-10 minutes (mine took 10 minutes)
Let cool on cookie sheet for a few minutes before moving the cookies to a cooling rack.
