Melvin chose a Pikachu Pokémon Cake for his 6th Birthday
He also decided it needed to be a Lemon Pikachu cake ... a child after my own heart as I also LOVE Lemon Cake 💗
Besides Lemon Cake I also made Vanilla and Chocolate Cupcakes with Sprinkles and cute Pokémon cupcake wrappers.
Sweet Olivia had the cutest Pikachu sweatshirt on for the Pokémon party 💛 Cally has become one of Olivia's favorite people!!
Melvin had a blast at his 6th birthday party with family and friends. Later on, in the evening after the party was over, Billy sent me this sweet picture of an exhausted Melvin holding on tight to his big Pokémon card 💙 Sweet dreams to Gram's big 6 year old ... XOXO
Lemon Cake
Lemon Cake Mix
1 cup sugar
1 cup flour
3/4 teaspoon salt
2 teaspoons Lemon Emulsion (or lemon extract)
1 1/3 cups water
1 cup sour cream
2 tablespoons oil
4 egg whites
Preheat oven to 350 degrees
Mix everything together and pour into a 9X13 pan. Bake 35 to 40 minutes or until toothpick comes out clean when testing the cake. If making cupcakes, bake at 325 degrees for 18-20 minutes (recipe will make 34-36 cupcakes)
Buttercream Icing
3 sticks of butter
1 1/2 cups Crisco
2 teaspoons vanilla
2 teaspoons almond extract (optional, can leave out)
4-8 tablespoons whipping cream (I add a little at a time)
2 pounds powdered sugar (may need a little more if too runny)
Beat butter and Crisco until light and fluffy (I beat mine for about 4 minutes). Add Vanilla and Almond Extract and mix until combined. Gradually add powdered sugar and whipping cream. I added about 2 more cups of powdered sugar to mine. It could be that I just added too much whipping cream and had to thicken mine up. You can add more powdered sugar if the icing seems to thin. This made enough icing to decorate the cake and 60 cupcakes. If just using the icing for the cake I would use 2 sticks butter, 1 cup Crisco, 6 cups powdered sugar, 1 teaspoon vanilla, 1 teaspoon almond extract and 3-4 Tablespoons whipping cream.
For the Vanilla Cupcakes I did the same recipe above except I used a White Cake mix and in place of the Lemon Emulsions I put in Vanilla Extract.
For the Chocolate Cupcakes about the same recipe above but I used Devil's Food Cake mix, added 1/2 cup of cocoa powder, in place of the water I used 1 1/3 cups coffee, I added 2 teaspoons of Instant Espresso Powder, I used 2 eggs in place of the 4 egg whites, and I used 2 teaspoons vanilla in place of the Lemon emulsion.
Bake the cupcakes at 325 degrees for 18-20 minutes
