Giant Peanut Butter Skillet Cookie
While poking around on the internet, I came across a recipe that said it was with help from AI.  Oh boy did that intrigue me!
I had used AI while I was working at Assurant.  At work the assignment was to create a superhero of yourself.  We were given the basic phrase to create the image and all you had to do was add your specific characteristics to the phrase, such as my hair color, my eye color, what color I wanted my cape ect.  So I kind of knew what to do when I opened up AI.

In the "What can I help with" box I asked AI to create a peanut butter cookie recipe baked in a 10 inch skillet.  AI did it.  In the matter of seconds AI gave me the recipe.  So of course I had to make it 😋

Off topic, I have some helpers today while working on my blog.  Morris and Charlie were cold and cuddled up beside me.  Morris (orange) is my inside only cat.  Once I brought him in from the barn he has not had any interest to go out again.  Meanwhile Charlie (black) is my inside/outside cat.  Charlie is very vocal when it is time to go out. Since it has been super cold in Ohio, Charlie has not been going out - smart cat!  Usually he goes out a couple times a day for a few hours and then comes in at night to sleep.  You can see in the picture I have an Apple Airtag on him.  That way I can track him if I need to.
This AI recipe was perfect!  The recipe said it would be crispy on the edges and soft in the center and it was exactly that.  I got a chuckle out of the serving size.  It said 6-8 people or 1 very determined human 😂.  Bill and I had a hard time walking away.  Bill said that if he wanted, he could be that 1 determined human lol. Stay tuned as I try more AI generated recipes (probably using my skillet - I love baking desserts in my cast-iron skillet)

Giant Peanut Butter Skillet Cookie
AI generated recipe

1 stick melted butter
3/4 cup brown sugar
1/4 cup granulated sugar
1/2 cup peanut butter
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips (3/4 for dough and 1/4 reserved for sprinkling on top)

Heat oven to 350 degrees.  Place your butter in the skillet and let the butter melt as the stove heats up.  Mine was melted before the oven reached temperature and had started to brown a little, so keep an eye on it as it melts.

After the butter was melted, I poured it into my mixing bowl. The butter that remained on the bottom of the skillet helped with the cookie coming out of the pan very easily.

To the butter add both sugars and cream together.
Add in the peanut butter and mix until combined.
Add vanilla and egg and mix in.
Add dry ingredients and mix just to combined
Add 3/4 cup of the chocolate chips and fold into the dough.

Smash the dough into your skillet and sprinkle the remaining chocolate chips on top (I did push mine down a little into the dough)

bake for 20-25 minutes  (mine was done at 22 minutes)

Let cool before slicing because the cookie may crumble while warm
